CATALÁN ROMESCO DIP ROMESCO

People in Cataluña often gather in season to enjoy calçots, a type of young onion. In fields, they char them to bits over open flames, and then they dip them in romesco sauce and lower the entire thing into their open mouth.

Romesco is one of our favorite foods, and ours is made with a traditional recipe: almonds and hazelnuts grown in Cataluña, ripe tomato and the dried ñora pepper.

This sauce goes great on grilled vegetables, meats, seafood and sandwiches.
